Super Easy Vegan Pumpkin Spice Muffins

Here it is: the easiest, cheapest, and quickest baking sesh of all time.

It’s a recipe for 3-Ingredient Pumpkin Spice Muffins – and it is life.

The recipe calls for just a box of Spice cake mix, pumpkin puree, and applesauce. You could mix it all in 10 minutes, cook if for another 15, and let it cool. Bam! It’s like microwaveable mug cakes, just with a little less guilt.

Even though I was questioning it at first, the mixture came out really well with great consistency. It didn’t rise much as it was cooking so you would have to pack the mixture on for each muffin to get a big size. After it cools, you’ll notice that the muffin doesn’t really stick onto the cupcake lining. It’s awesome because the awkward moments where the muffin divides and crumbles as you try to peel it are THE WORST.

The muffins came out super moist and fluffy. I ended up making about 18 medium sized muffins last night. I came home this afternoon to two left. They’re that good.

The best part about this kind of muffin is that you can garnish it with literally anything your heart desires – pumpkin seeds, walnuts, coconut flakes, apple chunks, anything…

BONUS TIP: You can even pick a little bit at the raw dough if you’re like me where you eat while you cook.

This is definitely worth a try and super easy to do, even with kids!
